Both the Asus and the Gigabyte are good mid-range X58 boards. One you didn't mention is the EVGA X58 SLI LE. For just plain good looks it can't be beat. It has onboard power, reset, and clear CMOS switches, plus a post code LCD display that changes to display your CPU temp once the board has posted.
EVGA has the best customer service of the three, IMHO, and a great warranty.
If I sound a little prejudiced, it's because I bought one last week, and I'm staring at it right now and drooling as I write this reply :)
Check it out: http://www.amazon.com/EVGA-141-BL-E757-TR-X58-SLI-Mainboard/dp/B002...
Asus boards in my opinion are the best performing, however all three are about the same as far as reliability. Having owned all three, and actually writing this post on a Gigabyte board, I'd say that either of the 3 would work fine.
Asus Rampage III

;)
Out of interest. Why have you chosen a mobile CPU? As far as I know they won't fit into any of the desktop boards as they're for 1366, the CPU uses a PGA988 socket for laptops. Go for an i7 920 or something. It'll perform a LOT better and they have brilliant over clocking abilities if you couple them with a decent cooling solution.

Also, the new 6000 series mid range cards just came out which actually run fairly close to the 5870 and are cheaper (unless there's a sale of last gen stuff on). 800W may be a little overkill too unless you're running a triple CrossFire or something. You can probably save a few bucks getting a 650 or something that should still do the job nicely.
